Mango and Mint Super-Salad

If your idea of a salad is lettuce, cucumber and tomato, you don’t know what you’re missing! My yummy super-salad is just as easy to prepare as your L.C.T. but infinitely more interesting and delicious. If you can buy a pack of carrot and beetroot already julienned, do so – it makes salad preparation an absolute breeze. A beautifully-constructed salad can be a satisfying light meal in itself, or work as a delicious addition to a main course. I love pairing this salad with my Dukkah-Crusted Fried Fish for a totally indulgent and restaurant-worthy dinner.


Serves 1




Adjust quantities to suit your taste
handful of rocket
1/4 cup carrot and beetroot, chopped into fine matchsticks
1/4 cup shredded cabbage
1/2 Lebanese cucumber, sliced
handful of fresh bean shoots
1/4 cup red and yellow peppers, thinly sliced
handful of red and yellow grape tomatoes, halved
1/2 mango, chopped into thin wedges
1 tbsp fresh mint, roughly chopped
1 tbsp spring onion (scallion), chopped


  1. Assemble your salad on a large plate or bowl, in the order of ingredients as written, starting with rocket and finishing with a sprinkling of mint and onion
  2. I find I don't need to add any salad dressing, as the mango is sweet and juicy enough, but feel free to mix a teaspoon of olive oil with a little balsamic to drizzle over your salad if you like
