Low fat Banana Bread

Low fat Banana Bread

Yes, you can eat banana bread on a diet! This delicious version is almost fat free, but you won’t be able to tell – it’s full of flavour and lovely and moist. I’m not anti-fat, by the way, but it does push the calories up in most baked goods, and that’s not great if you’re trying to lose weight. My yummy recipe has only 165 calories per slice and it tastes great just as it is, so you won’t be tempted to spread butter on top (and undo all your good work!) You don’t have to use wholemeal flour, but it has more fibre and nutrients than white flour, so I recommend you do.

½ cup brown sugar
2 cups wholemeal self-raising flour
2 egg whites
5 ripe bananas, mashed
2 tsp bicarb soda
1 tsp vanilla essence
½ cup low fat milk

  1. Line a loaf tin with greaseproof baking paper. Set oven to 175C/350F
  2. In a mixing bowl, combine sugar and egg whites
  3. Add milk, vanilla and bicarb soda
  4. Stir in mashed bananas
  5. Fold in flour
  6. Pour mixture into tin and bake for approx. 30 minutes, or until cooked and lightly golden brown
