Louise's Cereal Cookies

This fabulous recipe was sent to me by one of my lovely subscribers, Louise. She told me she was inspired by watching me prepare a big batch of mixed cereals in my Diet Day on a Plate video. Reminded how much she loves cereal, she thought it would be a great idea to make cookies out of it. Her recipe sounded so good, I couldn’t wait to try it, and I wasn’t disappointed! These cookies are so quick and easy to make, and taste amazing. You can use any breakfast cereals you like; pick ones with lots of wholesome ingredients like bran, raisins, oats and seeds. I used: Sultana Bran, Bran straws and Be Natural pink lady apple and raisin.

Makes 15 cookies

Ingredients

4 cups breakfast cereal
30g (1 oz) chopped almonds
30g (1 oz) chopped dates
1 banana
120g (4 oz) apple puree or applesauce
1 tsp cinnamon

Instructions

  1. In a large mixing bowl, roughly grind up the breakfast cereals. I used a potato masher
  2. Add almonds, dates and cinnamon
  3. Mash banana well and mix with apple puree. Add to cereals and mix until everything is well combined and you have a nice firm cookie 'dough'. Your hands are the best tools for this!
  4. Use your hands to shape 15 flattish round cookies
  5. Place cookies on a baking tray lined with greaseproof baking paper and bake at 180C/350F for approx 35 minutes, or until cookies are browned.
  6. Allow to cool before eating. Cookies will firm up and still be slightly chewy - in other words, perfect!
