Fabulous Vegetable Stir Fry

If I could only give you one recipe, I think it would be this one. This dish ticks all the boxes: it’s nutritious, delicious, low calorie, versatile and great as leftovers. A vegetable stir fry recipe is less about ingredients and more about the method. Start with the right cookware: I recommend using a deep, non-stick wok that has a flat, rather than rounded, base. Try to chop all your vegetables evenly. Save yourself some work by starting with a bag of pre-cut vegetables, such as carrot, beetroot and cabbage. You can then add any other vegetables, in any quantities you like, as long as you get the timing right; you need the harder vegetables like onions to be nearly cooked through before you add the very quick-cooking veggies like asparagus near the end. Don’t add the sauce too early or your veggies will steam rather than fry: the goal is to end up with a wok-full of evenly cooked vegetables that still have a little crunch and freshness to them.

Serves 4-6

Ingredients

1 large pack of chopped stir-fry vegetables
1/2 red capsicum (bell pepper), sliced
1/2 yellow capsicum (bell pepper), sliced
1 large onion, sliced
2 large handfuls of snow peas, topped and tailed
2 bunches asparagus, cut into 2" pieces
1 bag fresh bean shoots
handful baby spinach leaves
1 tbsp olive oil
For the sauce:
1 tbsp oyster sauce
3 tbsp water
1 tbsp fresh ginger, chopped finely

Instructions

  1. Mix sauce ingredients together in a small bowl and set aside
  2. Heat oil in wok, turn light down to medium and cook onion, stirring occasionally until it starts to soften
  3. Add capsicum and cook until nearly soft
  4. Turn light up to high and add pack of stir-fry mix, stirring well. Cook approx 2 minutes
  5. Add asparagus, snow peas, bean shoots and spinach
  6. Pour sauce over vegetables and stir well, so vegetables are all mixed up and sauce is well distributed
  7. Keep frying and stirring for approx 5 minutes, or until vegetables are just cooked, but still have a little crunch
