Easy Cheese Omelette

Omelettes have a reputation for being tricky, but they’re really not! This cheese omelette is quick, simple & tastes amazing. It’s a great source of protein and only has about 365 calories, so it’s very diet-friendly and perfect for a light meal, with perhaps a salad on the side. Omelettes are never boring because you can add any fillings you like. Vegetables are a fantastic, low-calorie way to enhance your omelette: try throwing in a handful of spinach, asparagus, tomato, mushrooms or peppers. Or get a bit fancy with some shredded chicken, shrimp … just about anything really, with the possible exception of Nutella (though I can’t say it hasn’t crossed my mind!
Serves 1


2 large eggs + 1 egg white
½ tsp thyme
1 tsp onion powder
Black pepper
2 tsps butter
30g (1 oz) grated cheddar cheese


  1. Crack whole eggs + separated egg white into a bowl
  2. Add 2 eggshell halves of water & beat with a fork until combined
  3. Season with pepper, thyme and onion powder
  4. Switch on your griller/broiler to 190C/375F
  5. On your stove top, melt butter in a non-stick frying pan, making sure the whole base is covered and a bit up the sides
  6. Turn heat down to medium, add beaten egg mixture and wait until it starts to set a little
  7. Using a spatula, push an edge of omelette inwards, then tilt pan so runny egg fills the space you have made. Keep doing this with different edges, until there is no more uncooked egg
  8. Sprinkle cheese over half the omelette then place under the grill/broiler until omelette has puffed up and it’s all golden brown on top
  9. To serve, tilt pan over plate, and as omelette begins to slide out use edge of pan to fold omelette in half
