This is a very simple and healthy recipe but you won’t believe how delicious it is – it tastes just like a dessert! I usually have a bowl of fruit in the fridge, already chopped up. Try to find sugar-free Greek yogurt – Chobani make a good one – otherwise check the labels and pick one with the lowest sugar content. Use any combination of seeds that you like; sunflower and pumpkin seeds are my favourites as they add a really nice crunch. I like to garnish my parfait with fresh mint for a little extra flavour kick.
- Beginning with a layer of fruit salad, and finishing with a layer of yogurt, place alternate layers of fruit salad and yogurt in a glass jar or tumbler.
- Sprinkle seeds on top
- Garnish with fresh mint and berries
