Bircher Muesli

I first tried Bircher muesli at a hotel breakfast buffet, and I was hooked at first spoonful; it was really that good! Sweet, creamy and loaded with cream, nuts and dried fruits, it was obvious that this was no ordinary ‘muesli’ – and it most certainly was not diet-friendly! I could tell it had diet potential, though; it just needed a bit of tweaking to cut the calories while keeping all the creamy deliciousness. I think I have achieved that with this recipe – I honestly think it’s better than the hotel’s version.

Serves 2


1 cup rolled oats
1 small pink lady apple, grated
1/2 cup apple juice
1/2 cup low fat vanilla yogurt
1 tbsp sultanas


  1. Combine all ingredients, cover and refrigerate overnight
  2. Stir well before serving. Bircher muesli should be perfect consistency, but if you find it too thick you can stir in a dash of low fat milk
  3. Top with a few berries and 1 tsp chopped nuts or seeds
