I first tried Bircher muesli at a hotel breakfast buffet, and I was hooked at first spoonful; it was really that good! Sweet, creamy and loaded with cream, nuts and dried fruits, it was obvious that this was no ordinary ‘muesli’ – and it most certainly was not diet-friendly! I could tell it had diet potential, though; it just needed a bit of tweaking to cut the calories while keeping all the creamy deliciousness. I think I have achieved that with this recipe – I honestly think it’s better than the hotel’s version.
- Combine all ingredients, cover and refrigerate overnight
- Stir well before serving. Bircher muesli should be perfect consistency, but if you find it too thick you can stir in a dash of low fat milk
- Top with a few berries and 1 tsp chopped nuts or seeds
